Why A Gluten Free Lifestyle?

Gluten is defined as:
— noun — a protein consisting of a mixture of glutelin and gliadin, present in cereal grains, esp wheat. A gluten-free diet is necessary in cases of coeliac (celiac) disease. via Dictionary.com

My oldest daughter has had problems with her stomach most of her life. As she was turning 21 she asked her doctor what could be causing all of her problems. He said that the only thing that came to mind was Gluten Allergy or Coeliac Disease.

As you might have guessed from my other blogs (see bottom of page for our other blogs) we wasted little time in researching what Coeliac Disease and Gluten Allergy meant and what we needed to do. My daughters doctor also referred her to a Specialist to do a biopsy of her little intestine near the stomach to determine if her problem was Coeliac Disease.

Getting in to see the specialist took over a month, so during that time, my daughter had taken herself completely off of anything with gluten. Looking back, it took longer to do the biopsy because she did remove gluten prior to seeing the specialist which told her to go back on gluten 2 weeks before they could do the procedure. Luckily, the biopsy came up negative.

Based on the symptoms and results of the biopsy, it was determined that she has a sever allergic reaction to Gluten. My daughter already had learned how tough the challenge was going t be When she went back on the Gluten Free Diet. It seemed to take forever, in her view, to get herself back to feeling great with energy that my says daughter has never had.

So to answer "Why A Gluten Free Lifestyle?" It is kind of simple. A diet alone will not do it. A lifestyle is taking in all aspects of ones life in areas such as:

  • Going out to dinner with friends.
  • No quickie meals like Hamburger Helper and Rice-A-Roni
  • Reading every label to understand what the ingredients are
  • You have to live the change or you will be sick all the time
  • Energy level extreamly low with problems sleeping
  • Stools large in size, rock hard, and only once or twice a week
  • Low energy and bloating if you accidentally eat the wrong food
  • My daughters and I are going to write our thoughts and ideas here, along with recipes we find and what we do to modify regular gluten foods into Gluten Free foods. If you are going through this for the first time or have been living this lifestyle for years, I hope you will send us your thoughts, views, ideas, and recipes to share with others.
